Roasted Red Potatoes

Cut the potatoes into 1/4 in thick slices; toss with oil. Place in a single layer in a greased 13in x 9in x 2in baking pan. Sprinkle with salt, pepper and Parmesan cheese. Cover tightly with foil. Bake at 350 degrees for 40 minutes or until tender. Yield: 4 servings.


1 lb small red potatoes
1 tablespoon olive or vegetable oil
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons grated Parmesan cheese
